Recipe of the Week!
 Skillet Stuffed Peppers

Nutritional Information (serves 4):

Calories: 160
Fat: 7 grams
Carbohydrates: 13 grams
Fiber: 2 grams
Protein: 13 grams

Ingredients:

1 pound lean ground beef
1 celery rib, chopped
1 carrot, peeled and sliced
  2 cups soft bread crumbs
  1/4 cup water
  2 Tbsp. cider vinegar
  1/2 tsp. dry mustard
  1/2 tsp. garlic powder
  1/2 tsp. onion powder
  4 green bell peppers, stems removed
  1 cup water

 In a skillet over medium heat, cook ground beef, celery and  carrot, stirring occasionally, until meat is browned, about 10 minutes.  Remove skillet from heat and stir in bread crumbs, 1/4 cup water, vinegar, mustard, garlic powder and onion powder; set aside.

Meanwhile, cut green peppers in half lengthwise and discard the seeds.  Divide beef mixture among the pepper halves,   packing in lightly. In the skillet that was just emptied, add 1 cup water and arrange stuffed peppers inside.  Heat water to       boiling, then reduce to low, cover and simmer for 15 minutes or until peppers are tender-crisp.

These stuffed peppers are economical and easy to make.  Use red and yellow peppers for variety, and experiment with seasonings for a personal touch!
