Recipe of the Week!
 Shrimp with Tomatoes and Garlic

Nutritional Information (serves 4):

Calories: 140
Fat: 4 grams
Carbohydrates: 10 grams
Fiber: 2 grams
Protein: 16 grams

Ingredients:

1 Tbsp. olive oil
1/2 onion, chopped
4 cloves garlic, peeled and minced
  1 green pepper, seeded and chopped into 1/4-inch pieces
  1 14.5-oz. can chopped tomatoes, drained1 tsp. crushed dried thyme
  1/8 tsp. salt
  1/8 tsp. ground black pepper
  1 pound shrimp, peeled and deveined
  1 lemon, juiced

  Heat oil in large skillet over medium heat.  Add onion and sauté until soft, about 5
  minutes.  Add garlic and bell  pepper, sauté another 5 minutes.  Add tomatoes and
  reduce heat to low; add thyme, salt and pepper.  Simmer 10  minutes.  Add shrimp,
  mix well, and simmer until shrimp are pink and curled, about 7 minutes.  Sprinkle with
  lemon.

  Turn this dish into a complete meal with fluffy rice, crusty bread and a green salad!
