Recipe of the Week!
 Oven Roasted Shrimp with Salsa

Nutritional Information (serves 6):

Calories: 150
Fat: 6gram
Carbohydrate: 6 grams
Protein: 18 grams

  Ingredients:

1/2 lb. Roma tomatoes, diced
1 onion, peeled and diced
2 limes, juiced
1 jalapeno chile, seeded and minced
  1/2 tsp ground cumin
  1 1/2 lbs. large shrimp, peeled & deveined
  2 Tbsp olive oil
  1/2 tsp salt
  1/4 tsp ground black pepper

  Preheat oven to 450°F.   In a 13x9x2 baking dish, toss tomatoes, onion, lime juice,
  jalapeno and cumin; mix well.   Toss shrimp with oil, salt and pepper.  Evenly spread out
  shrimp atop tomato mixture.  Place in oven and cook until shrimp are pink and salsa is
  hot, about 8 minutes.  Turn halfway through to ensure even cooking.  Serve warm.

  These succulent shrimp with warm salsa are great as taco filling or tossed with pasta!
