Recipe of the Week!
 Honey Crunch Chicken

Nutritional Information (serves 4):

Calories: 260
Fat: 6 grams
Carbohydrates: 16 grams
Fiber: 2 grams
Protein: 34 grams

 Ingredients:
4 6-ounce boneless, skinless chicken breasts
1/2 tsp. salt
1/4 tsp. ground black pepper
3 Tbsp. low-fat mayonnaise
  1/3 cup crushed wheat and barley cereal (Grape-Nuts)
  4 tsp. honey, warmed

Rinse chicken and pat dry.  Place in prepared pan and season with salt and pepper.  Using a pastry brush, spread mayonnaise over both sides of chicken.  Sprinkle cereal evenly over top of chicken; drizzle with honey.  Let chicken stand at room temperature for
10 minutes.  Bake, uncovered, for 30 minutes or until done.  

 This delicious low-fat chicken gets its sweetness and texture from its coating of honey and cereal.
