Recipe of the Week!
 Lightly Glazed Carrots

Nutritional Information (serves 6):

Calories: 80
Fat: 1.5 grams
Carbohydrates: 18 grams
Protein: 2 grams

Ingredients:

2 lbs carrots, peeled
1 Tbsp honey
1/4 tsp salt
  2 tsp unsalted butter
  1 Tbsp fresh chopped parsley

  Slice carrots lengthwise and quarter into 3-inch pieces.  Place in a saucepan and barely 
  cover with water.

  Add honey and salt and bring to a boil.  Reduce heat and simmer, uncovered, until carrots
  are tender.  Increase heat  and boil off excess water.

  Remove pan from heat and let cool slightly.  Stir in butter.  Transfer to a warm serving 
  dish.  Garnish with parsley and serve.

 This quick and easy recipe makes a perfect side dish!
