Recipe of the Week! Nutritional Information (serves 6): Calories: 180 Ingredients: 1 Tbsp vegetable
oil
Heat oil in a large saucepan over medium heat. Add carrots, onion,
garlic and leeks. Cook, stirring frequently, for 10 minutes. Add small
amounts of water (1 Tbsp at a time)
Stir in tomatoes, water, parsley, bay leaf, salt, saffron, thyme and
pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer
for 30 minutes. Add seafood. Cook uncovered for 15 minutes, or until
seafood is cooked. Remove and discard bay leaf This delicious and protein-rich soup will hit the spot on a cold winter night!
