Recipe of the Week!
 Apple Whole Grain Bread Pudding

Nutritional Information (serves 16):

Calories: 100
Fat: 1 gram
Carbohydrate: 19 grams
Protein: 4 grams

  Ingredients:

4 cups soft whole-grain bread crumbs
1 cup 1% milk
1/2 cup apple juice
4 cups thinly sliced, peeled apples
  1/4 cup raisins
  1 tsp grated lemon peel
  1 tsp ground cinnamon
  1 tsp ground nutmeg
  2 egg whites
  2 Tbsp Splenda for baking
  1/2 tsp vanilla

   Preheat oven to 325°F.  Place bread crumbs in a large mixing bowl.  Add milk and apple
   juice and toss well.  Add apples, raisins, lemon peel, cinnamon and nutmeg.  Set aside. 

   In a medium mixing bowl, beat egg whites until foamy with an electric mixer set on
   medium speed.  Gradually add sugar and vanilla, mixing until stiff peaks form. Fold egg
   whites into apple and raisin mixture.  Spoon mixture into a lightly buttered 13x9x2 baking
  dish.

   Set in a pan of water.  Bake for 45-50 minutes or until apples are tender and lightly
   browned on top.  Serve warm as is or with lowfat frozen yogurt.

   A healthy twist on a classic dessert favorite that is sure to please!
